Pickle-Pineapple Hummus

I finished a jar of pickles at lunch today.  I didn't want to just throw away all that pickle juice...so I came up with something to throw it in. There is still some leftover though, I'll have to think of something else crazy to use up the rest of it.


Pickle-Pineapple Hummus
3/4 c chick peas
1/4 c pickle juice
4 large spoonfuls crushed pineapple
garlic powder to taste
2 tbsp chia seeds

Put the first 4 ingredients in a food processor and blend together.
Transfer to a bowl, add the chia seeds.  (They will soak up the extra liquid)

Fruity Chicken Salad III



Place two B/S chicken breasts in the bottom of a saucepan.  Sprinkle them with garlic powder and turmeric.  Throw some fresh basil leaves on top.  Add 1/2 c pumpkin beer, and fill the pot with water.  Put on the stove with medium heat.  When it boils, reduce the temperature, cover, and let simmer for 10 minutes.  Then remove the pot from the heat and let it sit, covered, for 20 minutes.  Then remove the chicken from the pot and shred it.







Mix the shredded chicken with mayonnaise, 2 spoonfuls of Basil-Cashew Pesto, 2 tbsp chia seeds, 1/2 c chopped sprite melon, , and a handful of dried cherries.

Sour Cream Basil Dip


3 small cloves garlic
handful of basil leaves
1/4 c chick peas
3/4 c sour cream

As usual, measurements are approximate...I don't really know exactly how much chick peas or sour cream I used. I put the garlic cloves in the food processor first, then when they were chopped up I added the basil, when it was chopped up I added the chick peas, when they were chopped up I added the sour cream and let it all get blended together. Simple and tasty.   



In other news, something is eating my basil plant.  My INDOOR basil plant.  I haven't decided yet whether or not I need to freak out and throw away the whole plant in order to save myself from whatever tiny little  bugs are destroying it.

Ground Beef Surprise


It's been too long since I concocted something random in the kitchen, so I decided to remedy that yesterday.  I went through the fridge and cabinets and came up with some random things to throw together.  It came out quite tasty, just like all my other experiments.

Ingredient List
I also used about 1/4 c of marinara sauce, which I forgot to write down.


Brown the onion and garlic, then add the chickpeas, corn, and tomatoes.  Cook for a bit, then add the beef.  Mix well, then add the mushrooms and pineapple.  Add seasonings. Add marinara sauce.  Cook until it reaches whatever level of thickness appeals to you.  Serve over pasta.

Arugula Rolls Take 2

I guess I've been neglecting this blog.  Sadly, kitchen experiments have fallen by the wayside in favor of my newer hobby, photography.  I'm having my first show this coming Friday, and I'm super excited.  I've been pretty busy getting ready for it though!


Staying busy with photography doesn't mean I haven't been cooking, it just means I haven't found the time to document everything I've made.  Tonight was a whirlwind in the kitchen, as I'm looking ahead to a busy and disorganized week, and have no idea when I will have time to cook again before next Sunday.  I made crock pot pulled pork, tuna salad, baked chicken thighs, carrot soup, and arugula rolls.



Arugula Rolls Take 2

garlic
onion
mushrooms
kale
red wine
arugula
cheese
bread dough

preheat oven to 450

For the bread dough: Combine 2 tsp yeast, garlic powder, ginger powder, a dash of salt, 1 tsp sugar, 6 oz hot water, and a bit of olive oil.  Add 1/2 cup of whole wheat flour.  Knead in white flour until the dough is no longer sticky. Cover and let rise for 30+ minutes.  Punch down dough, add a bit more flour if necessary.  Roll out the dough into a large rectangle.  

For the filling: Chop some garlic, 1/4 of an onion, and a few strips of bacon (chopped), and cook til browned.  Add chopped mushrooms and kale.  When the mushrooms are almost done, add some red wine.  Let it cook for awhile, then spoon out the wine.  

Construct the roll: Spread shredded cheese and arugula on the rolled-out bread dough.  Add the cooked ingredients on top, sprinkle on some more cheese.  Roll up the dough.  Spread some cornmeal on a baking and lay the roll on the cornmeal. Sprinkle some cheese on top.  Bake for 15 minutes.

Stuffing Muffins


I always throw the ends of bread loaves into the freezer.  Sometimes they turn into stuffing, sometimes bread pudding.  I got a new roommate recently, and it's been getting hard to close the freezer door.  I had almost 2 loaves worth of bread in there, so I figured it was about time to do something with it.  I didn't manage to use all of it, but I did manage to use of some of it!

Ingredients
garlic cloves
fresh ginger root
1/4 yellow onion
2 slices of bacon
2 small carrots
big handful of cranberries
1 egg
veggie stock
c 3/4 loaf of dried bread

Directions
Preheat the oven to 350.
Chop the garlic, ginger, and onion and saute in some olive oil.  Chop the bacon and add it when the onion starts to brown.  Grate the carrot and put it in a big bowl.  Chop the cranberries and add them to the bowl. Add the garlic/ginger/onion/bacon mixture.  Beat the egg and add it.  Add c 1/2 c of veggie stock.  Mix well.  Break the bread into roughly 1 inch pieces and add it.  Stir well until all of the bread is moist.  Add more veggie stock if needed.  Grease a muffin tin.  Shape the stuffing mixture into 12 balls and put them in the muffin tin.  Bake for 25-30 minutes.

Crockpot Chicken Stew


3 b/s chicken breasts
4 cloves garlic
1 inch ginger root
1 small onion
5 celery sticks
7 small carrots
1 can of corn
1 can of stewed tomatoes
1 1/2 c pumpkin
1 1/2 c veggie stock
basil
oregano
turmeric
cumin


Mince the garlic and ginger and saute them in bacon grease.  When they are browned, add the onion and cook til translucent.  Put the chicken in the bottom of the crockpot, add the garlic, ginger, and onion on top.  Chop the celery and carrots, add them to the crockpot.  Add the corn, then the tomatoes.  Mix together the pumpkin with 1/2 c veggie stock, then pour it over the contents of the crockpot.  Mix the rest of the veggie stock with herbs & seasonings, then add to the crockpot.  Cook on low for 6 hours. When done cooking, shred the chicken and mix well.  


This made a tasty lunch on a stormy day.  I ate it with a gouda and spinach grilled cheese sandwich.

Broccoli Salad


1 1/2 heads of broccoli 
(steamed and chopped)

3 slices bacon
1 inch ginger root
3 cloves garlic
(chopped and cooked together in a skillet)

1 large spoonful of mayonnaise
soy sauce
ginger powder
mustard powder
(blended together)

small handful of chives
(finely chopped)

mix everything together

Cranberry-Beef Stew


2 lb pot roast
(coat with wheat flour, cinnamon, and cocoa powder)

5 carrots
(chopped)

1/2 onion, 4 cloves garlic, big chunk of ginger
(chopped and sauteed)

1/2 c cranberries

1/2 c pumpkin, 1/2 c beef broth, 1 c cranberry juice
(blended)

5 large mushrooms, chopped

Place the coated pot roast in the bottom of a crockpot.  Put the sauteed stuff on top.  Dump the carrots on top, then the cranberries.  Pour the liquids over the contents of the pot, then scatter the mushrooms on top.  If you have a bunch of extra flour/cinnamon/cocoa coating like I did, sprinkle some on top.
 Cook on low for 7.5 hours. 
(My pot roast was pretty thin.  If yours is thicker it may take more time.)
When the meat is cooked through, remove it from the pot.  Shred the meat, discard the fat.
Return the shredded meat to the pot and stir well.




I ate mine with some barley.  Delicious.

Pumpkin-Chicken Chili


Ok, I'll be honest.  This probably shouldn't be called a chili...because there are no chilis in it.  But that's just because I don't eat spicy things.  If you try out this recipe, all ya gotta do is throw some chilis in the pot and then it can qualify as a chili.  Or maybe that's not how it works...I have no idea.

Ingredients
1 chicken breast 
1 giant scoop of pumpkin (probably 3/4+ c)
1 can stewed tomatoes
1 can diced tomatoes
1 can sweet corn
1/2 c veggie stock
1/2 c beef stock
3 cloves garlic
1 inch ginger root
small chunk of onion
4 radishes



Directions
Chop the onion and mince the garlic & ginger.  Brown them in a skillet.  Trim skin and excess fat off of the chicken, then place it in the bottom of the crockpot.  Don't worry about the bones for now.  Dump the onion/ginger/garlic on top of the chicken.  In a large bowl, combine the pumpkin, tomatoes, corn, and stocks, and stir well.  (I used beef stock because that's what I had...I'm sure chicken stock would work just as well).  Add seasonings, stir again.  I used oregano, turmeric, garlic powder, and ginger powder.  Chop the radishes and add them to the bowl.  Mix it up.  Dump the contents of the bowl on top of the chicken.  
Put the lid on the crockpot.  Cook on low for 6.5-7 hours.  



Now for the fun part...removing the chicken bones.  The chicken should fall apart when you try to lift it out with a fork.  If you want to be more thorough than me, I suggest you use a very large spoon to get the chicken out.  Then shred it, remove all bones, and return the chicken to the crockpot.  I ended up shredding the chicken without taking it out of the crockpot, and then I had to go fishing for the bones.  I think I got them all...but I'm not positive....

I was going to make some cornbread to go with this chili, but I was too hungry after my run today to wait for it to cook, so I just ate a bowl of chili by itself.  (Ok, not entirely by itself, I had a bowl of pasta next to it).  I will hopefully make some cornbread tomorrow to go with it.
