Peanut Butter Chicken Pasta


2 b/s chicken breasts
garlic powder
ginger powder
turmeric powder
1/2 c vegetable stock
1-2 tbsp soy sauce
1/2 c crunchy peanut butter
1 carrot
2 big handfuls arugula


Chop the chicken into bite-sized pieces and dump them into a skillet on medium heat.  Liberally sprinkle with the seasonings (If I was less lazy, I would have used fresh minced garlic and ginger). Add the vegetable stock and soy sauce to the skillet.  Stir occasionally as the chicken cooks, so that it will cook evenly through.  When the chicken is about down, add the peanut butter.  Mix well. Turn down the heat so that the chicken doesn't over-cook.  Chop the carrot into bite sized pieces and add that as well.  The pan should stay hot just long enough to soften the carrots.  Add the arugula a minute or two before serving; it tastes better if it doesn't wilt too much.  Serve over the grain of your choice.  I chose pasta of course, but I'm sure it would be just as tasty over rice or quinoa or farro or whatever.

Arugula Rolls Take 2

I guess I've been neglecting this blog.  Sadly, kitchen experiments have fallen by the wayside in favor of my newer hobby, photography.  I'm having my first show this coming Friday, and I'm super excited.  I've been pretty busy getting ready for it though!


Staying busy with photography doesn't mean I haven't been cooking, it just means I haven't found the time to document everything I've made.  Tonight was a whirlwind in the kitchen, as I'm looking ahead to a busy and disorganized week, and have no idea when I will have time to cook again before next Sunday.  I made crock pot pulled pork, tuna salad, baked chicken thighs, carrot soup, and arugula rolls.



Arugula Rolls Take 2

garlic
onion
mushrooms
kale
red wine
arugula
cheese
bread dough

preheat oven to 450

For the bread dough: Combine 2 tsp yeast, garlic powder, ginger powder, a dash of salt, 1 tsp sugar, 6 oz hot water, and a bit of olive oil.  Add 1/2 cup of whole wheat flour.  Knead in white flour until the dough is no longer sticky. Cover and let rise for 30+ minutes.  Punch down dough, add a bit more flour if necessary.  Roll out the dough into a large rectangle.  

For the filling: Chop some garlic, 1/4 of an onion, and a few strips of bacon (chopped), and cook til browned.  Add chopped mushrooms and kale.  When the mushrooms are almost done, add some red wine.  Let it cook for awhile, then spoon out the wine.  

Construct the roll: Spread shredded cheese and arugula on the rolled-out bread dough.  Add the cooked ingredients on top, sprinkle on some more cheese.  Roll up the dough.  Spread some cornmeal on a baking and lay the roll on the cornmeal. Sprinkle some cheese on top.  Bake for 15 minutes.

Cream Cheese Mac

I try to eat healthy as often as possible.  But sometimes, I just crave mac n cheese.  And sometimes, I remember that I just happened to buy cream cheese the other day and haven't done anything with it.  And think that maybe I should add cream cheese to the mac n cheese.  And darn it, I just remembered that I also have sour cream in my fridge that I should have thrown in because it needs to get used.  Oh well.  I missed out on using the sour cream, but I did use some cream cheese!



By the way, I'm currently eating my second helping.  This stuff is too good.  Maybe I'll run it off in my race on Saturday...It will only be the 2nd 10k course I have ever run.  I've done a 10k in Lewisburg for the past 5 years, but it's the only 10k I've ever done, and while my times for the past 2 years have been decent, I really really want to break 40 minutes. I'm hoping to achieve that this weekend.  New course, flatter course, and hopefully some better competition to help carry me to a PR! 

Anyway.  Cream Cheese Mac.  Deliciousness.

Boil some water and throw in about half a box of elbow macaroni.  In a smaller saucepan, combine 3 tbsp butter, 3-4 tbsp cream cheese, a bunch of heavy cream, 1/4 c wheat flour, and a big handful of shredded cheese. Once everything is all melty and delicious, and the macaroni is cooked, combine in an oven-safe dish.  Oh and by the way, grate a carrot and mix it in with all that.  Then you can pretend it's healthy.  Mix well, sprinkle more cheese over the top, and bake at 375 degrees for 30 minutes.  

I enjoyed my mac and cheese on a bed of arugula, topped with a crabby beef burger and some shaved & sauteed parsnips.  And then I drizzled ranch dressing over the whole thing because...I thought it might be too dry without it?  And...go big or go home? 

It was delicious.  
Eating super healthy all the time is overrated.

Pot Roast Sandwich


For the Pot Roast:
Sprinkle whole wheat flour and brown sugar across the bottom of a crockpot.  Roll a 2.5 lb roast around in the flour and sugar.  Mix together 1/2 c pumpkin, 1/2 c orange juice, and 1 c cranberry juice, then pour the mixture over the roast.  Cook on high for 6 hours, then shred the roast.  




For the Sandwich:
Toast a whole wheat bun.  Put a handful of arugula on the bottom half of the bun.  Cover with pot roast.  Add some tomato slices and avocado. Add the top bun.  
Eat. Devour.

Arugula-Mushroom Rolls


It's been a fabulous weekend!  Yesterday the temp got up above 70 and I got to spend some quality bonding time with my horse.  Today, it was in the mid-60s and I had a really great 10.6 mile run.  I intended to run 5 or 6, but it was so nice outside, and I felt good, so I just kept on going.  It feels great to be back to a good running schedule.  I'm at 2 weeks above 30 miles each now.  
A run like today's needs a good carb & protein loaded dinner, and this one hit the spot.


For the dough:
3 scant tsp yeast
6 oz hot water
1/2 tsp salt
garlic powder
onion powder
crushed rosemary
1/2 c wheat flour
1 1/2 c flour

Let rise in a warm place.

Once the dough has risen, place it on a floured surface and use your fingers to spread it into a large rectangle.  Flip is over occasionally so that both sides get some flour on them.  Spread some pesto on the flattened dough, then grate some cheese on top.  Cover with sliced mushrooms, add some more cheese, cover with handfuls of arugula. Add more cheese.  Roll it up and place on a greased baking pan. 
Grate some cheese on top.

Bake at 450 for 20 min.











Makes a wonderful meal with some home-made meatballs.

Top with avocado if you're addicted like I am.

Arugula Rolls and Bacon-y Joes


The original Sloppy Joe recipe can be found here.  Today's was mostly the same, but I added two big, thick, strips of bacon.  And didn't measure any of the ingredients.  And instead of tomato soup I used a bunch of leftover sauce from the last time I made meatballs.  And I used a bit of heavy cream this time too.

Side note:  these are still a work in progress.  They were pretty good, but not nearly as taste-full as I had hoped.  I will definitely be playing with this recipe some more in the future!

BLT Pasta

One of the best ideas ever.  Inspiration came from Some the Wiser.  A picture and recipe showed up on my Facebook feed this morning via Foodies Like Us.  As soon as I saw it, I knew I would have to try it out.  And adapt it of course.

 grape tomatoes

bacon

pesto and mustard

fresh garlic

linguini

arugula

Maybe I should call it BAT Pasta, for Bacon-Arugula-Tomato Pasta...

Cook the pasta.  Fry the bacon in a pan, add some fresh garlic.  Add the mushrooms when the bacon is done.  Add 1/4 c red wine.  Add the grape tomatoes, cook for just a few minutes.  Toss the pasta with some pesto and mustard. Add a few handfuls of arugula.  Add the other ingredients.  The heat from the bacon/mushroom/etc will wilt the arugula.  


Eat up!  Pure Deliciousness.
