Basil Smashed Peas on Pizza

I had a variety of ideas for dinner tonight.  I figured out pretty quickly that I was going to make baked chicken tenders, but it took me awhile longer to figure out what I was going to eat with them.  Did I want to make mac & cheese?  Did I want to make pizza?  Did I want to make some other kind of pasta dish?  If I made pizza, did I want the chicken tenders on the pizza, or next to it?  So many decisions...

I narrowed it down to pizza, so I pulled a hunk of dough out of the fridge to warm up while the chicken tenders were cooking.  (sliced b/s chicken breasts, coated with a mixture of garlic powder, italian bread crumbs, and corn meal)  I also had to come up with a vegetable to go with dinner. I had some leftover peas, and I remembered the Minty-Smash Peas that I made a few years ago that were pretty tasty.  I decided to make a variation of those.

I put about 1/2+ cup of peas into my food processor and sprinkled them with garlic powder.  Then I decided to use basil instead of mint.  I added a generous handful of fresh basil leaves to the processor, and added just a splash of olive oil.  When I blended it up, it seemed a bit too dry, so I added approximately a tablespoon of ranch dressing.

I was going to have the smashed peas next to my pizza, but then it occurred tome that I could use them as a pizza sauce of sorts.  So I did that instead.  I spread the peas out on my crust, topped them with a bit of sliced onion and two sliced mushrooms, added shredded colby jack cheese, and popped it in the oven.  (450 degrees, 20 minutes)





It was super delicious.

Pizza : My new go-to meal

I tend to do a bunch of cooking on the weekend so that I can eat leftovers all week on the nights that I don't have time to cook (or am too hungry to wait for something to cook).  The problem with making a big vat of stew or something is that it gets boring to eat the same thing every night.  I tend to eat the exact same thing for breakfast and lunch every day, because it easier for my schedule to keep them consistent, so I like to have variety for dinner.

I don't make pizza very often because the dough is time consuming.  It only very recently occurred to me that I could make a batch of pizza dough, keep it in the fridge, and break off chunks each time I want to make a pizza!  It is now my favorite thing to do for dinner.  I can change up the toppings each night, so it doesn't quite seem like I am eating the same thing.  And I don't quite eat pizza every  night, some nights I have done pasta instead.

The pizza dough recipe I used to use always came out very bread-y.  It wasn't bad, but it wasn't quite what I imagine when I think of pizza.  A few weeks ago, I decided to try a new recipe to see if I could find one I liked better.  I loved the first one I tried, and now I am sticking with it.  It comes out much thinner than my previous crust, and has just the right balance of chewiness and crunch.

Pizza Dough
3 tsp yeast
garlic powder
1 tsp salt
1 tsp sugar
1 1/2 c water (110 degrees)
2 tbsp olive oil
3-4 c flour

spread very thin, add toppings, bake at 450 for 15 minutes

I use my stand mixer to mix the dough, it is so much simpler and cleaner than mixing in a bowl.  The dough hook brings the dough together so nicely and it is easy to tell when to stop adding flour.  Once the dough has lost most of its stickiness, I transfer it to a silpat mat and knead it with a bit more flour, for just a few minutes.  Then I grease a bowl, put in the dough, cover it with plastic wrap, and let it rise for an hour or two.  When I punch it down, I remove a chunk for my dinner, and put the rest in an airtight container in the fridge.  I can get 4-5 pizzas out of each batch of dough.  Each pizza comes out a bit smaller than my pizza pan.  

I often bake some chicken breasts and cook some ground beef early in the week, both are great pizza toppings and can be combined with any vegetable toppings.

These all happen to have chicken and mushroom...but I have also made pizzas with ground beef!

In addition to changing up the toppings, I also change up the sauce.  Sometimes I don't even add a sauce.  Sometimes I use sun-dried tomato alfredo, sometimes red sauce, sometimes pesto.

Zucchini Pizza


Pizza Dough
2 tsp yeast
7 oz hot water (120 degrees)
garlic powder
oregano
1/2 tsp sea salt
1/2 c whole wheat flour
2 c white flour
1 tbsp olive oil

Toppings
marinara/Basil-Cashew Pesto mix
sliced tomato
spaghetti-ed zucchini
fresh basil
colby jack cheese

Bake at 450 for 15-20 minutes





Deliciousness.  I had some salmon on the side, extra deliciousness.

SAT Pizza

Spinach Artichoke sun-dried Tomato Pizza


Very delicious dinner tonight, with this pizza and some salmon.  

SAT Pizza

dough
2 tsp yeast
6 oz hot water
garlic powder
onion powder
ginger powder
1 tsp salt
1/2 tbsp sugar
1/2 c wheat flour
1+ c flour

toppings
pesto
spinach
artichoke
sun-dried tomato
colby jack cheese


bake @ 450 for 15-20 minutes







add a side of salmon, and dinner is served!

Pulled-Pork Pizza


I've got a bunch of pulled pork left over from NYE.  I love my pulled pork sandwiches, but tonight I wanted something different for dinner.  I also had some artichokes and mushrooms laying around, and I decided they needed to go on a pizza.  With the pulled pork. 


the crust: 2 tsp yeast, 1 c hot water, salt, garlic powder, 1/2 c wheat flour, 2+ c flour


bbq sauce

mushrooms & artichokes

pulled pork

colby jack cheese


baked @ 400 for 20-25 minutes

don't forget the vegetable
